Rumours of an 8-core Coffee Lake CPU have been circulating for quite some time, alongside reports of an upcoming Z390 series of motherboards. While nothing concrete has been heard from Intel yet, it is clear that Intel wants to hamper AMD's Ryzen momentum.
Intel currently offers the highest core clock speeds in the CPU market, with AMD offering the most CPU cores on mainstream motherboards, creating a situation where AMD could deliver a performance advantage in the high-end with Ryzen 2nd generation, where AMD's CPUs are expected to offer higher base/boost clock speeds, potentially allowing AMD to take the lead in multi-threaded workloads.
The most straightforward solution to this problem from Intel's perspective is to create mainstream CPUs with more cores/threads, removing AMD's core count advantage while also showcasing their clock speed advantages. Creating an 8-core Coffee Lake CPU seems like a smart idea for the Intel, as it gives them an opportunity to showcase their strengths and the chance assert their dominance.
Two independent sources have reported the discovery of an upcoming Intel Coffee 8-core CPU on the 3DMARK database, with matching data about what appears to be an engineering sample on a test motherboard. These rumours have been reported by both Videocardz and TUM APISAK, who frequently uncovers pre-release benchmarking data.

This image showcases an unknown Intel Coffee Lake CPU with 8-cores and 16-threads on what appears to be an Intel reference motherboard platform. The base clock speed of this CPU is listed as 2.2GHz, though it is possible that this is being misread by 3DMARK.
At this time it is unknown when Intel plans to release the remainder of their Coffee Lake CPU lineup, which includes their lower-end motherboard chipset additional low-end and intermediate desktop chips, which range from Celeron and Pentium models to new i5 class 6-core designs.
